Update: What I’ve been up too!

So I started my WordPress blog almost exactly one year ago.  I was feeling un-fulfilled with my job and like my schooling and education with holistic nutrition wasn’t being used.  So I started writing my blog, Instagraming and Tweeting with like minded and passionate people.  Since then I got connected with a local, independent Vitamin and Supplement Company that changed my path in a such a positive way.  Being wrapped up with a group in such a growing stage took front and center and my hobbies like blogging ect. took a back seat.

I’M BACK to say I’ve missed it, life is about balance and even if I throw myself willingly into a passionate project I want to take time out to continue to write and connect.

Sooo I thought this would be a good time to bridge the gaps and tell you about the brand/company I feel so in love with.

PS this is still my Nutrition Blog so don’t worry I can’t wait to blog recipes/tips and thoughts about the ever changing/evolving Holistic Nutrition field 🙂

What I do!  I’m proud to be Vitality’s Registered Holistic Nutritionist, I love working closely with our retailers, working with education (really just getting to chat with like minded people about things we are so passionate about!)

Zesty Lime Green Ginger Juice

Ahh Vancouver has turned from winter to summer over night and I love it! Everyday this week we’ve been running to the beach in the mornings and having a refreshing juice to recover, this morning was no different. We made a Zesty Lime Green Juice today and it was particularly amazing so I wanted to share since it’s been awhile!

    We used a ton of celery and cucumber which is super hydrating and refreshing! A yellow bell pepper, an orange, grapefruit, lemon and lime zest and all, some mint (this was first time trying to juice with mint, wasn’t particularly minty but might need to use more next time..) and Apple and Ginger!!

I always juice my cuc and celery first, and leave the more pulpy fruits till the end, just to make sure I don’t clog my juicer, and leave the ginger till very last 🙂

That’s it! Super simple! I topped mine with some chia seeds for added protein for after run recovery! 🙂

Juicing is a fantastic way to get a wide variety of micro and phytonutrients that normally we wouldn’t get in a day. It also boots your live enzymes and gives you a fantastic shot of energy and alkalizing effects for so many benefits! I highly recommend adding juicing to your diet but it’s definitely not a replacement for eating you fruits and veggies just a nutritious addition!

Quick and Easy Apple Cinnamon Quinoa Chia Jar :)

Soo Simple Quinoa Chia Jar, add any fruits or nuts to mix up this easy lunch!

Rarely does a “throw together lunch” turn out so well, but i was pretty surprised by this one.  I always have left over quinoa, i tossed that in a jar added a tsp of chia seeds and cut up half apple and some cinnamon.  Filled the jar 3/4 of the way up with almond milk, put the lid on the jar and gave it a good shake.  The chia seeds will absorb the liquid and by lunch time you will have a amazing quinoa chia dish, I also added some mixed soaked nuts for a nice crunch! You can easily mix up this recipe with any fruit of choice, even throw in your favourite protein powder to amp up the protein in the meal! Lunch should be easy and quick, use whatever you have in your kitchen, thats how this dish came to be, so be inventive food is a great place to be creative!

Recipe:

1 cup Quinoa

1 Tbs Chia seeds

Half an apple cut up (or any fresh or frozen fruit of choice)

1 tsp Cinnamon

3/4 cup (about) Almond Milk (can use any milk alternative or water)

Half a hand full of nuts of your choice (preferably soaked)

Quinoa is amazing staple to any diet, it is very high in protein (fantastic for veg or vegans) but also will keep your blood sugar stable and you feeling full for longer aiding in weigh loss and weight maintenance.  

Cinnamon is another fantastic weight loss aid. Cinnamon is very high in the trace mineral chromium, which is needed in the body to control blood sugar. (Some back ground on blood sugar balance: spikes and drops in blood sugar cause cortisol to be released  this is the hormone that tells the body to store fat, particularly belly fat. Keeping blood sugar balanced is soo important for weight loss and weigh management!! )

Chia Seeds, these things are the bomb! Chia seeds are super high in fiber which keep us full and help eliminate toxins from the body. Soak the chia seeds to keep the colon hydrated, the gel coating actually absorbs toxins and pulls them out of the intestines and from the body. Chias are also very high in protein which keep us full and are thermogenic (metabolism boosting for weight loss)

Apples, add any fruit to get the live enzymes, antioxidants and phytonutrients!

Nuts, add these guys in for even more protein and healthy fats! Please don’t be scared of fats, we need them! Through my health journey I have had a bad relationship with fats, I was so scared of them and completely cut them out of my diet, through doing that i learnt how important they are! I through my hormones completley out of wack, and was always craving carb and fat foods because I was never satiated. I now know the importance of good quality fats and always have them in my diet! Take me word become friends with fats! Of course good quality and keep in mind about quantity 🙂

Chlorella, the second time I made this dish I added one of my favourite superfoods, Chlorella! I could go on and on about the algae’s but in short chlorella is a amazingly alkalizing and cleansing.  It’s main claim to fame is the heavy metal detoxifying properties which we all need to be aware of this day in time! Salt and Vinegar Roasted Chickpeas

Ms Vickie’s Salt and Vinegar Chips were my once ultimate snack. This inspired my attempt at finding a healthier version.
The ultimate Chickpea would be the perfect base for this snack and roasting it would give it a crunch that chips have! I found that chickpeas are the perfect snack to aid in weight loss, they are high in protein and fiber which helps balance your blood sugar and keep you full longer!! The higher iron count is also great for a vegetarian or vegan in giving that energy boost. Here goes nothing! 🙂

Bring the chickpeas to a boil in regular white vinegar, remove from heat and let soak for 35 minutes. (Fill free to soak them up to an hour if you feel).

Drain chickpeas and lay out on a lightly greased pan I used coconut oil. And sprinkle with your favourite cracked sea salt. I added some fresh cracked pepper as well because I’m obsessed with pepper.. Totally optional.

Bake on 375 for 35 minutes. Make sure to check on and shake the chickpeas around every 10-15 minutes to insure they don’t burn.
Try to let cool and enjoy!!

Ingredients:
1 can chickpeas
1 cup white Vinegar
Sea salt
Oil of choice, coconut oil or olive can be used.

Give it a try, come up with your favours flavours and share!! Would love to hear from anyone who has done the same to their favourite snack!

Three Ingredient Alkalizing Juice

The body is most acidic first in the morning from recovering and detoxing throughout the night. To off set this and get my body started off right I made a really simple juice. Of course you can add whatever veg or fruit you want, I typically have 5 minutes to throw together a quick detox juice. This nutrient dense, alkalizing juice is about 4-5 carrots, a whole lemon skin and everything (the zest is amazing) and then I topped it up with 1/3 cup coconut water. Grab and go.
– note its important to use organic when juicing because the skins and everything are being juiced!

Hello!
I’m definitely not one to “food prep” for the week… I wish I was that organized 😉 But I always seem to have left over or extra quinoa. Perfect for the Easiest on the go Lunch. Threw in frozen berries, topped that with chia and a dash of coconut water for chias to soak in. I found I didn’t need any sweetener but organic maple syrup or molasses could be added! Thinking next time a scoop of plain yogurt and some nuts would be a great way to up the protein!!
